Hedgehogs

Ingredients:


2 bay leaves
5 to 10 whole black peppercorns
1 pound ground turkey
1 onion, finely chopped
1 1/2 cups of rice
1 egg
1 tablespoon tomato paste (optional)
Salt and pepper to taste
1/2 cup of water

Ingredients substitutions:


You can add chopped parsley or dill instead of tomato paste

Steps:


1. Boil a large pot of salted water with bay leaves and peppercorns.
2. Mix the remaining ingredients together and shape mixture into balls (golf-ball size), wetting your hands so the meat does not stick to your hands.
3. Drop the balls into boiling water and simmer on low for 20 to 30 minutes until the balls are cooked through and rice sticks out to resemble hedgehog needles.

What makes this recipe special?

Two things make this recipe special: you can whip it together in 15 minutes or less of active time, and kids adore it! I have yet to meet a kid who does not like it.

Additional notes:

Serve warm with sour cream, hot sauce, or plain. Can sprinkle some herbs in top (parsley or dill).
