Country Breakfast Pie

Ingredients:


1 1-pound package sausage
9-inch pre-made pie shell
1 1/2 cups grated Swiss or cheddar cheese
4 large eggs, lightly beaten
2 tablespoons chopped onion
1/4 cup chopped green pepper
1/4 cup chopped red bell pepper
1 cup light cream or Half-n-Half
Non-stick spray (possibly; read Additional Notes section)

Steps:


1. Preheat oven to 375 degrees Fahrenheit.
2. Cook sausage until done; crumble, then drain.
3. Cook pie shell until light golden brown, cool.
4. Mix cheese and sausage in separate bowl; once blended, add to pie shell.
5. Beat eggs lightly in bowl; pour into pie shell over the cheese/sausage mixture.
6. Combine remaining ingredients and add to pie shell mixture.
7. Bake in oven for 40 minutes. (Check to see that egg mixture is done before removing from oven; add 5 minutes if not.).
8. Cool on rack for 10 minutes prior to serving.

What makes this recipe special?

I gained the recipe from my church's cookbook and have used it many years.

Additional notes:

If you create your own pie shell, remember to treat pan with non-stick spray prior to use to avoid sticking. Also, if you desire a low-carb recipe, you can omit the pie shell. For this version, treat the pan with non-stick spray, and decrease the cook time to 30 minutes. Check every 5 minutes until done.
