Mom's Coffee Cake

Ingredients:


1 cup shortening (e.g., Crisco)
1 cup sugar
2 eggs
3 cups flour
1/2 teaspoon salt
3 teaspoons baking powder
1 cup milk
1 teaspoon vanilla
1 1/2 cup brown sugar
2 teaspoons cinnamon
1 cup chopped nuts (walnuts or pecans), optional
1/2 cup butter (1 stick), melted

Steps:


1. Preheat oven to 375 degrees Fahrenheit.
2. Cream shortening and sugar. Add eggs and mix well.
3. Combine flour, salt, and baking powder in a separate mixing bowl.
4. Alternate adding milk and dry ingredients to the shortening/sugar mixture, mixing well, until all ingredients are combined.
5. Add vanilla.
6. In a small bowl mix together brown sugar, cinnamon, and nuts (if using).
7. Grease a 9" x 13" cake pan.
8. Spread half of the batter into the cake pan.
9. Spread half of the brown sugar/cinnamon mixture on top of the batter.
10. Spread the rest of the batter over the top. (The batter can be hard to spread, so dip a spoon in the melted butter and use the back of the spoon to spread evenly.)
11. Top with the rest of the brown sugar/cinnamon mixture.
12. Drizzle the melted butter over the top.
13. Bake for 30 minutes.

What makes this recipe special?

My mom made this recipe for over 60 years—a family favorite—and I continue the tradition, especially on holidays. When I asked about the origin of the recipe, she said she found it in the local newspaper when she was a newlywed.
