Ingredients:
About 6 cups cooked rice
2 tablespoons butter
1 1/2 pounds skinless, boneless chicken breast, cut into bite-sized pieces
1 cup sliced mushrooms
1/2 teaspoon garlic powder
3/4 cup sour cream
1/4 teaspoon black pepper
1 10-ounce can cream of mushroom soup
1/4 cup crushed Ritz (or similar) crackers
1 tablespoon butter, melted
1/2 teaspoon poppy seeds
Steps:
1. Preheat oven to 350 degrees Fahrenheit.
2. Set aside the cooked rice in a large bowl.
3. Add 1 tablespoon butter to skillet; place over high heat until hot.
4. Add chicken, mushrooms, and garlic powder to skillet; sauté 4 minutes or until chicken is done. Remove from heat.
5. Add chicken mixture, sour cream, pepper, and cream of mushroom soup to cooked rice, stirring until well blended.
6. Spoon mixture into 2-quart casserole dish coated with about 1 tablespoon butter (or cooking spray).
7. Combine cracker crumbs, melted butter, and poppy seeds; sprinkle over chicken mixture.
8. Bake for 35 minutes or until thoroughly heated.
