Ingredients:
6 zucchinis or güicoyitos
1/4 pound mozzarella cheese
1 medium carrot
1 medium onion
2 tablespoons butter
Frying oil
Steps:
1. Cook the zucchinis or güicoyitos in salted water.
2. Once cooked, drain them in a colander.
3. In the meantime, grate the cheese and the carrot.
4. In a medium skillet over medium heat, saute the onion and the carrot in butter or frying oil until almost tender.
5. Add the cheese and stir.
6. Fill the zucchinis or güicoyitos with skillet mix and add more grated cheese on top.
7. Bake at 375 degrees Fahrenheit for 10 to 15 minutes.
