Fresh Mango Cake

Ingredients:


1/2 cup sugar
1/3 cup oil (canola or vegetable)
1 egg
1/2 cup + 2 tablespoons all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
3/4 cup chopped peeled mangoes (can add more for a chunkier texture)
1/4 cup chopped pecans
Confectioners' sugar (optional topping once cake has been baked and cooled)

Steps:


1. Preheat oven to 375 degrees Fahrenheit.
2. In a small bowl, beat the sugar, oil, and egg until well blended.
3. In another bowl, combine the flour, baking powder, salt, cinnamon, and nutmeg and gradually beat into sugar mixture and mix well.
3. Fold in mango and pecans.
4. Transfer to a greased 6" round baking pan.
5. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
6. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
7. Garnish with confectioners' sugar, if desired, once the cake has cooled down.

What makes this recipe special?

This recipe is special as I get to use fresh and delicious tasting mangoes in the summer months (my absolute favorite fruit) and turn it into a heavenly dessert!

Additional notes:

Cook's tip: Reserve a few mangoes to use as decoration for the final presentation of the cake.
