Bread Bhurji (Indian style egg and bread scramble)

Ingredients:


5 eggs
Splash of milk
Vegetable oil for sauteing
1/2 teaspoon cumin seeds
1 onion, chopped
1 tomato, chopped
1/2 teaspoon chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon mango powder (amchoor powder)
1/2 teaspoon garam masala
4 slices of bread
Butter for bread
Salt to taste
Chopped cilantro for garnish

Steps:


1. Beat eggs with a splash of milk and dash of salt. Set aside.
2. Heat oil in a pan.
3. Add cumin seeds.
4. After cumin seeds crackle, add onion and tomato and sauté.
5. After the onion and tomato soften, add chili powder, turmeric, mango powder, and garam masala. Cook until fragrant.
6. While onion, tomato, and spice mixture cooks, toast bread. Once toasted, cut off crusts and butter. Then cut bread into cubes. Set aside.
7. Add beaten eggs to pan with onions, tomatoes, and spices. Gently push around the pan until scrambled. Add salt to taste.
8. Add toasted and buttered bread cubes to pan and mix well.
9. Add chopped cilantro for garnish and serve warm.

What makes this recipe special?

I had this dish for the first time in a small café in Bangalore, India. As soon as I had it, I knew I had to replicate it at home. This dish is perfect for both breakfast and lunch.

Additional notes:

Garam masala is an Indian spice blend generally made of ground cumin, coriander, cardamom, black pepper, cinnamon, nutmeg, and cloves.
