Marry Me Carrot Cake

Ingredients:


Cake:
2 cups sugar
1 1/2 cups vegetable oil
4 beaten eggs
2 cups flour
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons cinnamon
4 cups grated carrots
1/2 cup chopped pecans

Icing:
2 sticks butter, softened
1 16-ounce package creamed cheese, softened
1 36-ounce bag powdered sugar
4 teaspoons vanilla
1 cup chopped pecans

Steps:


For the cake:
1. Preheat oven to 300 degrees Fahrenheit.
2. Beat eggs, sugar, and oil in large bowl.
3. Add flour, salt, baking powder, and cinnamon gradually.
4. Fold in nuts and carrots.
5. Pour batter into three 9" greased round pans.
6. Bake for 60 to 70 minutes.
7. Remove from oven and let cool completely before icing.

For the icing:
1. Beat all ingredients until smooth.

What makes this recipe special?

When I was dating my wife, she lived in Tampa and I lived in DC. I was in Tampa for a long weekend visit and she made this cake for me. I ate it (yes, the whole cake; no I didn't know it's name) while she was at work on Friday. I bought the engagement ring when I returned to DC.
