Hootenholler Whiskey Cake

Ingredients:


1/2 cup softened butter
1 cup sugar
3 eggs
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup bourbon
3/4 pound raisins
2 cups chopped pecans
1/4 teaspoon salt
1/2 teaspoon nutmeg
1/4 cup molasses

Steps:


1. Preheat oven to 300 degrees Fahrenheit.
2. In a large mixing bowl, cream butter, gradually adding sugar and beating with mixer until light.
2. Add eggs to batter one at a time, still mixing.
3. In a separate bowl, combine flour, baking powder, salt, and nutmeg.
4. Gradually add flour mixture to batter, alternating with milk and bourbon and ending with dry ingredients.
5. Combine molasses and baking soda and add to batter.
6. Stir in raisins and pecans to batter.
7. Grease and flour a 9" x 5" x 3" loaf pan.
8. Add batter to pan.
9. Bake for 1 hour and 55 minutes, or until an inserted knife or toothpick comes out clean.

What makes this recipe special?

My Great Aunt Ellen was a prolific Southern cook. When she passed, I inherited her collection of hundreds of recipes, all handwritten on 3" x 5" index cards. It was hard to pick one to share, but the name of this cake set it apart.
