Meringue Mint Cookies

Ingredients:


2 egg whites
Pinch of salt
1/2 teaspoon cream of tartar
3/4 cups white granulated sugar
1 cup chocolate chips
A few drops peppermint extract

Steps:


1. Heat oven to 375 degrees Fahrenheit (350 degrees for a self-cleaning oven) for 15 minutes.
2. In a large bowl, beat the egg whites, salt, and cream of tartar.
3. Add the sugar and peppermint extract, and beat well.
4. Fold in the chocolate chips.
5. Drop the batter onto a cookie sheet lined with wax paper.
6. Turn off the oven after the 15 minutes, and put the sheet of cookies in the oven.
7. Leave in the oven overnight.

What makes this recipe special?

My favorite Christmas cookie. My mom would make these after we went to bed on Christmas Eve. It was a nice surprise in the morning when we thought she wasn't going to make them.
