Grandma’s Cheesecake

Ingredients:


Crust:
3 cups sifted flour
3/4 cups sugar
3 teaspoons lemon rind
1 1/2 cups soft butter
3 egg yolks

Filling:
5 8-ounce packages creamed cheese
1/4 teaspoon vanilla
3/4 cup sugar
1/2 teaspoon grated orange rind
1/2 teaspoon grated lemon rind
3 tablespoons flour
1/4 teaspoon salt
5 medium eggs
2 egg yolks
1/2 cup sour cream

Ingredients substitutions:


For crust - modify based on pan size – this is for a 10" x 3" springform pan and provides for a thick crust.

Steps:


For crust:
1. Blend soft butter, egg yolks, and sugar in bowl.
2. In a separate bowl, blend four and lemon rind.
3. Add flour and lemon rind to butter mixture.
4. Shape crust dough into two balls and refrigerate for 1 hour.
5. Work on filling while crust dough is in the refrigerator.

For filling:
1. Mix cream cheese and vanilla in a mixer until fluffy.
2. In a separate bowl, combine sugar, orange and lemon rinds, flour, and salt.
4. Slowly add the dry mixture to the cream cheese mixture to create the filling.
5. Add eggs to filling one at a time.
6. Add sour cream to the filling.

For cheesecake:
1. Preheat oven to 400 degrees Fahrenheit
2. Grease 10" by 3" springform pan.
3. Pat crust dough onto the bottom of the pan and bake for about 10 minutes until brown.
4. Let cool, and then pat the rest of the crust dough onto the sides of the springform pan.
5. Increase oven temperature to 500 degrees Fahrenheit.
6. Pour filling into the springform pan and bake cheesecake for 12 minutes until golden – watch it so it doesn’t burn.
7. Reduce oven to 200 degrees Fahrenheit and bake for another hour.
8. At the end of the hour, insert a toothpick into the cheesecake and remove to see if it comes out clean.
9. If necessary, bake cheesecake for up to 20 additional minutes.
10. Remove cheesecake from oven and let it rest until cooled.
11. Refrigerate overnight before serving.

My grandmother made this cheesecake for my birthday for years, and it is better than any other cheesecake I have ever had.
