Strawberry Guacamole

Ingredients:


2 large avacados, mashed
2 tablespoons lime juice
1 to 2 jalapeno peppers, finely diced (to taste)
1 cup strawberries, diced
1/4 cup red onion, finely diced
1 to 2 tablespoons cilantro, chopped (to taste)
Salt to taste
2 tablespoons sour cream (optional for a creamier texture)

Ingredients substitutions:


Mangos can be substituted for the strawberries as well.

Steps:


1. Mix all ingredients, serve, and enjoy!

What makes this recipe special?

The first time I made this was the same night I found out my wife was pregnant with our second son. My wife had a craving for strawberries, and I tossed them in the guacamole and must have made this another 30 to 40 times throughout the pregnancy as my wife craved it. She still loves it to this day. Other then that, it's a nice, light refreshing take on guacamole, suitable for a nice gathering of friends on the patio with drinks and tacos.
