Karen's Toffee Bars

Ingredients:


3 1/3 cups flour
1 cup brown sugar (preferably light brown sugar, but dark brown sugar is ok)
2 1/4 sticks butter (salted is ok)
2 eggs, beaten (only use about 3/8 of a cup—2 full eggs might be a little too much liquid)
2 cups chocolate chips
1/2 cup chocolate chips
1 cup white chocolate chips or 1 cup chopped nuts (walnuts or pecans)
1 14-ounce can of sweetened condensed milk
1 3/4 cups toffee bits, divided into 1 1/2 cups and 1/4 cup

Ingredients substitutions:


Can use eggbeaters instead of the eggs.
Can use margarine or butter-flavored Crisco instead of butter.

Steps:


1. Preheat oven to 300 degrees Fahrenheit.
2. Grease a 13" x 9" x 2" baking pan.
3. Stir together flour and brown sugar in a large bowl or in a mixer bowl.
4. Cut in the butter until the mixture resembles coarse crumbs.
5. Add the 3/8 cup of egg and mix well.
6. Stir in 2 cups of chocolate chips and the white chips or the nuts.
7. Reserve about 2 cups of the mixture and press the remainder onto bottom of the greased pan as evenly as possible.
8. Bake for 15 to 19 minutes, then take it out of oven. Note: Proceed to next step immediately after removing the pan from the oven.
9. Pour the sweetened condensed milk evenly over the crust and then top with 1 1/2 cups toffee bits.
10. Sprinkle the reserved crust mixture and the remaining 1/2 cup of chocolate chips.
11. Return to oven and bake for 30 to 35 minutes or until golden brown and bubbling around the sides.
12. Remove from oven and sprinkle with remaining 1/4 cup of toffee bits.
13. Cool completely before cutting into bars (should make about 48).

What makes this recipe special?

When I can’t decide on what to make, this is the one I go to. Everyone loves it, it is easy, but doesn’t present as easy, and you can even freeze the leftovers (if you don’t want them hanging around your house).

Additional notes:

Bars can be stored on the counter (no need to refrigerate).
