Spinach and Cheese Quiche

Ingredients:


1 store-bought pie pastry
3 eggs, beaten
1 egg yolk
1 1/2 cups half-and-half
1/8 teaspoon ground pepper
4 ounces sliced cheese (Swiss or muenster)
1/2 cup fresh spinach, shredded (optional)

Ingredients substitutions:


Optional to add in a couple of slices of cooked and crumbled bacon or sliced mushrooms. Whatever you like in a quiche will work.

Steps:


1. Preheat oven to 350 degrees Fahrenheit.
2. Roll out store-bought pie pastry in a 9" pie dish.
3. Put pie dish in oven for about 10 minutes to partially bake.
4. In a mixing bowl, combine eggs, egg yolk, half-and-half, and ground pepper and mix well until combined.
5. Remove pie dish from oven and layer cheese and other ingredients on top.
6. Pour egg mixture over layered ingredients.
7. Place pie dish back in oven and bake for about 40 minutes or until filling is set.
8. Remove from oven and let stand 10 minutes before serving.

What makes this recipe special?

My Nana made quiche quite often, and I loved it. My "shortcut" version reminds me of hers, but fits my style of cooking--tasty, but fast. Often, I make the base quiche and throw in whatever ingredients I have on hand.
